If you thought your Thanksgiving dinner was good, just wait until you try these amazingly delicious Thanksgiving leftover recipes. Make new dishes out of your leftover turkey, mashed potatoes, stuffing, and cranberry sauce. Anywhere from Turkey Shepard’s Pie to Thanksgiving Pizza

Thanksgiving Pizza

Ingredients:

1lb Pizza Dough
All-purpose Flour, for dusting
Thanksgiving Pizza1tsp Cornmeal
1tsp Extra-Virgin Olive Oil
1/2 tsp Sugar
3/4 C Mashed Potatoes
1/2 C Shredded Cheddar Cheese
2 tsps Whole Milk
1 C Prepared Stuffing
1 Roasted Turkey thigh
1/4 C Chunky Cranberry Sauce
1/4 C Gravy

Directions:

Put a pizza stone or upside-down baking sheet in oven; preheat to 450 degrees. Stretch the pizza dough into a 12-inch round on a floured surface. Dust a pizza peel with 1/2 tsp cornmeal and put dough on top. Brush with olive oil and sprinkle with the sugar and the remaining 1/2 tsp cornmeal. Slide onto the hot pizza stone or baking sheet and bake until golden on bottom, 5 to 7 minutes. Meanwhile, mix the mashed potatoes with 1/4 cup cheese and milk in bowl. Roll tablespoonfuls of the stuffing into 1-inch balls. Shred the turkey. Slide crust back into the peel. Spread cheddar mashed potatoes over crust, then top with shredded turkey. Spoon the cranberry sauce over pizza and drizzle with gravy. Arrange the stuffing balls on top and sprinkle with remaining 1/4 cup cheese. Put pizza back into oven and bake 8 to 10 more minutes.

Thanksgiving Turkey Pie Soup

Ingredients:

3 C Cooked Turkey                                                 2 1/2 tsp Salt
3/4 C Yellow Onion                                                 1 tsp Ground Black Pepper
1/2 C Celery                                                            1 tsp Dried Thyme
3/4 C Carrots                                                           2 Bay Leaves
1/2 C Peas                                                              3 3/4 C Chicken Broth
1/2 C Corn                                                               1 1/2 C Heavy Cream
1/2 C Green Beans                                                 1/3 C All Purpose Flour
3 1/2 C Potatoes                                                     Stuffing for topping
3 Cloves Garlic Minced

Directions:

Shred turkey meat. Chop onion, celery, and carrots into small pieces. Measure out 1/2 cup of Turkey Pie Soupcorn, peas, and green beans. Add minced garlic. Add prepared turkey and vegetables, along with salt and pepper, thyme, bay leaves, and chicken broth. Cover and cook on high for 4 hours, low for 8.

 

Turkey Shepherd’s Pie

Ingredients:

2 1/2 C Turkey                                                                   1/4 tsp black pepper
1/2 C Diced Onion                                                              Salt to taste
1 Clove Garlic Mince                                                          2 Cups Mashed Potatoes
2 C Corn, Peas, & Carrots                                                 1 Cup Freshly Cheddar Cheese
1 1/2 C Gravy                                                                     Fresh minced parsley
1/4 tsp dried thyme

Directions:

Preheat oven to 350 degrees. Spray a 1 quart casserole dish with nonstick cooking spray. In a medium saucepan, melt 1 tablespoon of butter or olive oil. Add onions. Stir in frozen vegetables, minced garlic, salt, pepper, and thyme. Cook for 1-2 mins. Add turkey and gravy and stir until coated. Transfer to the prepared casserole dish and press into even layer. Heat mashed potatoes to lukewarm and spreadable. Stir in half shredded cheese, then spread potatoes over the turkey mixture. Top with remaining shredded cheese. Bale for 30 minutes, or until top is golden and sides are bubbly.

Turkey Cranberry Sliders

Ingredients:

1 Package Hawaiian Sweet Rolls                                         1 Tbsp Dried Minced Onion
2 C Diced Turkey                                                                   Salt & Pepper to taste
1 C Cranberry Sauce                                                             Parmesan Cheese
6 Slices Swiss (or favorite cheese)
6 Tbsp Butter
1 Tbsp Yellow Mustard
1 Tbsp Worcestershire Sauce

Directions:

Preheat oven to 350 degrees. Cover 9×13 baking pan with foil. Spray with cooking spray. Cut entire slab of rolls in half lengthwise. (You will end up with one slab of “tops” and one slab of Turkey Cranberry Sliders“bottoms”. Place bottom slab in foiled cover pan. Layer with turkey, cranberry sauce, and cheese. Add top slab of rolls. Melt butter in microwave and whisk remaining ingredients (except parm. cheese). Pour evenly over rolls. Cover with foil and let sit for 5-10 minutes. Bake covered for 20 minutes. Uncover and cook 5 additional minutes.
